Smokey Soppressata Wrapped Pork Roast

For:  4 portions



  1. Toast fennel seeds, peppercorns & mustard seeds until fragrant.
  2. Add red chili to toasted spices & crush with back of a skillet.
  3. Wrap pork with soppressata slices.
  4. Tie together with kitchen string.
  5. Mix together herbs with salt, rosemary and garlic.
  6. Splash wrapped pork with oil & roll in spice mixture.
  7. Heat oil over medium-high heat.
  8. Brown the roast on both sides.
  9. Finish in over for another 30 minutes at 400 degrees.
  10. Rest the meat for 15 minutes before slicing.
